A very simple, flexible, banana bread (cake). The recipe in pictures will be useful for a first time.
In words:
Preheat oven to 160C (fan). need: banana, sugar, self raising flour, milk (optionally vegan), optionally: vanilla, oil, cocoa I use a normal mug, about 330ml, as a "cup"
1 cup (about 3) ripe bananas (or not ripe, it doesn’t really matter)
1.5 cup self raising flour, 2/3 cup sugar, 1/3 cup vegan milk (eg. soya, hazelnut). Optionally: 1tsp vanilla, 2tbsp oil,
Optionally, the mix can be split to make a marbling effect.
3 tbsp cocoa powder, 3tbsp boiling water
Add a little water to the main mix, if required, to get it smooth
Optionally, add in other ingredients, like chocolate chips or goji berries or dates or ginger.
Put in a loaf tin (4 x 8 inch, lined with baking paper)
If you split the mix, add in varying amounts, alternating from each bowl. Then, carefully mix it a little with a skewer or chopstick, to give marbling effect.
Cook for 45-60 minutes at 160C (fan) - until skewer comes out cleanish.
